Usually, the almonds bloom from mid-February through March, bees are very important for these trees as they are not self-pollinating. The two different varieties of almonds are planted in alternating rows so that the trees produce two varieties. These almonds mature in a shell that is surrounded by a fleshy part called a hull. These nuts mature over the summer and the hull dries revealing a shell that encloses the nut before harvesting the nuts dry naturally in the shell. California Almonds are harvested with the help of mechanical tree shakers between mid-August and October. After that the nuts are gathered for processing, cleaned and grading occurs. Finally, they are exported to nearly 90 countries.

It was established by the U.S. Congress in 1950 to supervise a grower-enacted Federal Marketing Order under the charge of the U.S. Department of Agriculture (USDA). The main aim of the Amond board is to broaden the spectrum of California Almonds through new research, industry support, and market development. Its motto is to expand the international and domestic distribution and consumption of almonds to benefit the entire industry. Their main activities include food quality and safety initiatives, nutrition, production & environmental research, and monitoring trade and market access issues. They don’t establish item prices.

California Almonds have a high oil content and less moisture but a long shelf life when handled with care. The factors that are responsible for almond shelf life and quality include the characteristics of the product, the environment during storage and distribution, and the packaging.   • California: This category includes those types which are mainly used in manufactured products. They are well suited for all the processes or applications due to a wide range of shell hardness, different kernel shapes, the color of skin, and surface characteristics.
  • Mission: This type has small and wide kernels with hard shells. Their skin is wrinkled and darker than Nonpareil. In this type, blanching is not done usually. 

Some almond types fall under more than one classification because they have features of more than one type. All the types of California Almonds are developed using traditional breeding methods, the varieties that are genetically modified are not planted in California.

Inshell almonds are further divided into two types:

  • Hard shell
  • Soft shell

Inshell-Hard Shell: This type is characterized by a closed shell with a hard outer ‘cork’ that protects the kernel against contamination & worm damage. The inshell-hard shell market has a limited volume in relation to other marketing outlets.

Inshell-Soft Shell: This type is preferred in the market with greater suture openings to allow seasonings to permeate the shell.
